This chocolate bar is made from white beans from hacienda Betulia.<\/p>\n
Don Pablo Velez, the cocoa producer of this authentic hacienda is extremely dedicated to produce the best possible cocoa beans from Colombia.<\/p>\n
Thorough genetic and sensorial analysis of wild local varieties in the farm led to a reproduction of three genetic varieties which produce purely white beans: B6, B8 and B9.<\/p>\n
ZOTO got involved after 7 years of work, when cocoa production volume of those 3 special varieties came to a level where entering the market became relevant. We helped finetuning the fermentation protocol during 1 year and are convinced that Don Pablo has all the skills to follow up independently the post-harvest processes in order to provide exquisite beans to the fine flavor market.<\/p>\n
We chose the variety B8, as it has a unique flavor profile and is very limited in volume.<\/p>\n
Our chocolate is a 70% dark chocolate, with an appearance of a milk chocolate, because of the white beans.<\/p>\n
