David decided to wait until he was &#8220;good enough&#8221; to work with this extremely delicate and nuanced cacao.<br role=\"presentation\" data-uw-rm-sr=\"\" \/><br role=\"presentation\" data-uw-rm-sr=\"\" \/>Five years later, David finally got his wish &#8211; we air-freighted in the cacao from Desmond in Jamaica and began carefully working with it.\u00a0 It\u2019s hard to overstate the incredible emotions that come along with this bar.\u00a0 Paying over four times the commodity price for the cacao, this chocolate is the realization of a dream.<br role=\"presentation\" data-uw-rm-sr=\"\" \/><br role=\"presentation\" data-uw-rm-sr=\"\" \/>Tasting notes: Star fruit, mocha, spice<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Letterpress, is a bean to bar chocolate maker from United States.
