The organic cocoa for this bar comes from Finca Elvesia (El Valle, Hato Mayor Province). This farm is set among rolling hills, far from tropical beaches and popular resorts. The farm is located in the agricultural community of El Valle and extends over 150 hectares of productive land. Finca Elvesia is a botanical garden with all kinds of cocoa varieties, which came from the middle of the 17th century, mainly from Venezuela. It feels like entering another universe – a peaceful cosmos of cocoa trees that sprout red, orange, yellow and green pods of all shapes and sizes.
Finca Elvesia is considered one of the most special farms in the Dominican Republic, not without reason.
Over the years, the farm has changed owners several times. Today it is Ramon Lopez. Ramon grew up in El Cibao, the heart of the Dominican cocoa sector. He is assisted by Isidro Castillo and employs around thirty five people.
The Dominican rum in this bar is from Barceló.
