Esta barra de chocolate Luisa Abram possui 81% cacau de origem selvagem da Amazônia Brasileira e pesa 80g.
Esse chocolate é feito com cacau nativo e selvagem de origem às margens do Rio Cassiporé, que fica no Parque Nacional do Cabo Orange, quase na fronteira com a Guiana Francesa, no Amapá. Um trecho pouco extenso da Floresta Amazônica o separa do Oceano Atlântico. Nesse local, encontramos muitos pés de cacau e há relatos de assentamentos Jesuítas na área a partir do final do século XVI. O cacau era uma forma de conseguirem renda para seu sustento. Àquela época, a Europa já́ estava consumindo cacau como bebida, e a manteiga de cacau era usada como pomada em ferimentos. A análise genética de algumas sementes desse cacau revela serem da família dos Amelonados, porém, da mais geneticamente homogênea que já́ vimos! Uma grande surpresa para nós: Poderia o vale do Rio Cassiporé ser o berço de origem da família dos Amelonados? A Cooperativa Cacau do Cassiporé está beneficiando para nós esse cacau tão especial.
Notas
Este é um chocolate de perfil suave e balanceado, cujo sabor nos remete a notas de caramelo, fudge e brownie. Também há notas de banana, tâmaras e até mesmo de laranja cristalizada. Mesmo em alto teor de cacau, não identificamos amargor ou adstringência.
