Ce cacao est cultivé dans la région de Sambirano au Nord de l’île où se concentre 95% de la production, il est issu des variétés Trinitario et Criollo.
Ces variétés, trés prisées des amateurs de chocolat ont été introduites par les français à la fin du XIXème siècle. Cacaoyers, arbres fruitiers, vanilliers et poivriers forment un système agroforestier unique et trés ancien le long du fleuve Sambirano. C’est peut-être le secret de ce cacao aux arômes de liqueurs de fruits (pêches, abricots, …).
