The artisanal pistachio, lemon and black cherry colomba with white chocolate glaze and chopped pistachio is a classic and delicious pastry recipe, which expertly combines lemon peel, black cherries and cubes of pistachio cremino, with a delicious glaze. The strength of the Calciano doves is the mother yeast. Refreshed four times a day every four hours, it guarantees softness, fragrance, fragrance and shelf life of the final product, without the use of any type of preservative. Fundamental to the creation of a product of excellence is the choice of high quality raw materials and the skilful succession of the numerous processing stages. The dove, as it should be. Swollen, well leavened, authentic, even in shape. The flavor is very precise: exactly what it is, in the common imagination. The interior is a beautiful bright yellow, studded with lemon peel, black cherry, pistachio cremino and the soft, elastic and supple dough is accompanied by perfectly balanced aromas.

Farina di frumento, pere candite, cioccolato fondente, burro, zucchero, tuorli d’uova fresche, lievito madre naturale, pasta d’arancia, miele malto, sale, baccelli di vaniglia naturale Madagascar. La colomba, come deve essere.

Gonfia, ben lievitata, autentica, anche nella forma. Al taglio esprime un aroma pieno, di pasticceria, lievito, canditi, vaniglia, percepibile anche a occhio nudo.

Il sapore è precisissimo: esattamente quel che è, nell’immaginario comune. L’interno è di un bel giallo acceso, costellato di canditi saporiti e l’impasto soffice, elastico e flessuoso è accompagnato dagli aromi perfettamente equilibrati tra di loro.

Ha tradizionalmente la forma stilizzata della colomba, simbolo di pace secondo la cultura cristiana.

Ore e ore di lievitazione danno vita ad un dolce morbido, intensamente profumato e con un sapore piacevolmente persistente.

Ideata da Dino Villani negli anni trenta del 1900, per sfruttare gli stessi macchinari e la stessa pasta dei panettoni natalizi nel periodo pasquale. Da allora la colomba pasquale si diffuse sulle tavole di tutti gli italiani, e anche ben oltre i confini dell’Italia. L’impasto originale, a base di farina, burro, uova, zucchero e buccia d’arancia candita, con una ricca glassatura alle mandorle, ha successivamente assunto varie forme e varianti.

Ogni prodotto è realizzato secondo una tradizione totalmente artigianale, priva di semilavorati e conservanti.e nella versione classica, pera e cioccolato, albicocca e zenzero e frutti di bosco.
