Idukki is a lush green hilly region located in the southern Indian state of Kerala. Cocoa is grown on small local farms, surrounded by tropical fruits like mango, papaya and coconut, as well as aromatic spice trees like pepper, nutmeg and cardamom. The fresh cocoa fruit is transported weekly to the fermentation center where it is subjected to a careful fermentation and drying process based on appropriate protocols.
The cocoa produced through close, trusting collaborations with partner farmers, has a clear and vibrant fruity flavor, with a subtle aroma of spices, as if it were a reflection of its creation.
