Kankel Philippines mucilago 100% is a cocoa with a pleasantly acidic taste, with aromatic notes of grapefruit, raspberry, passion fruit, tropical fruit, hazelnut, salted cardamom, white pepper, wood.
When you taste this extraordinary bar, the first sensation you will experience is the acidity of the mucilage which forces you to salivate more and generates freshness as well as enhancing the aromas of chocolate, fresh wood, with a light taste of grapefruit, hazelnut, with a sensation of cardamom and white pepper. On the palate it is clean with a load of fruit provided by the freeze-dried mucilage and leaves a pleasant sensation of cocoa.

La primera sensación es de acidez del mucilago que nos obliga a salivar más y genera frescor aparte de potenciar aromas del chocolate, de madera fresca, con sabor fruta de pomelo suave, con sensación de cardamomo y pimienta blanca. Empieza intenso y luego baja. En boca es limpio con carga de fruta que aporta el mucilago liofilizado y deja una sensación de cacao agradable y limpia y larga en el tiempo, es muy saciante. Conservar en lugar fresco y seco.
¿Cómo es posible esa pureza?
Combinamos cacao de variedad trinitaria, fermentado con mucho detalle, con el fin de expresar todo el sabor propio de la zona y el territorio. Al añadirle el mucílago, esa capa que protege el haba de cacao, liofilizado conseguimos una refrescante acidez que llena nuestra boca de umami, intensidad frutal, amaderada con notas a nuez.
