Kankel, is a bean to bar chocolate maker from Spain. This fine chocolate bar is made with cocoa from Madagascar (Sambirano Valley). Kankel Madagascar Sambirano 80% is a dark chocolate with a pleasantly acidic taste, with aromatic notes of pink grapefruit, yuzu, cherry, ginger.

Este cacao procede la isla de Madagascar, particularmente de la zona noroeste, donde Bertil Akesson tiene sus plantaciones, que ya su abuelo (un antiguo cónsul suizo en la isla) compro décadas antes y el sigue trabajando. Comparte cultivo con vainillas y en la plantación tiene un 80% trinitario 10% criollo y 10% forastero. Todo eso unido al suelo volcánico donde se sitúa la plantación en el valle de Sambirano a la falda de un volcán. Nos da como resultado un chocolate muy frutal con bajo amargor, pero una acidez de fruta roja importante de cereza, pomelo rosa, yuzu. Conservar en un lugar fresco y seco.
