Dark Chocolate Bar – Made by Orfève
Ce Cru de Terroir tendre et onctueux, totalement dénué d’acidité et d’amertume, présente de délicates notes florales et de fruits mûrs sur un fond chocolaté légèrement caramélisé.
Située entre les contreforts des Andes et l’Amazonie, à l’extrême Nord du Pays, la province de San Ignacio est bordée par la vallée du Rio Marañon et ses canyons abrupts.
Malgré la haute altitude, entre 1000 et 1250 mètres, son microclimat exceptionnel ainsi que son isolement ont permis d’y conserver une variété de cacao longtemps considérée comme disparue: un Nacional génétiquement parfaitement pur.
Depuis 2010, ce cacao fait l’objet d’un programme exceptionnel de préservation, grâce à l’appui de 400 agriculteurs propriétaires de la région, réunis autour d’un centre de traitement post-récolte modèle.
Après plusieurs années d’expérimentation, un strict protocole de fermentation et de séchage a pu être développé, permettant la parfaite expression des arômes extraordinairement délicats de ce cacao unique au monde.
