O chocolate Bean to Bar se diferencia do chocolate industrial principalmente pela lista de ingredientes. Nas barras intensas, nós usamos APENAS cacau (nibs e manteiga) e açúcar. Para isso, o cacau escolhido tem que ser muito bom, vindo do cultivo e processamento de pós colheita modernos e mais elaborados.
Para confeccionarmos uma barra 88%, colocamos apenas 12% de açúcar, o que requer um cacau de alta qualidade sensorial. Quando você tem uma barra de chocolate acima de 80%, a proposta é sentir intensidade, um “punch” de energia e os sabores inerentes ao cacau. Além disso, quanto mais intenso o chocolate, mais saudável ele é.
A inspiração para esta receita e porcentagem veio via a Borboleta 88 (Diaethria Clymena) que habita nossa região e origem de cacau, o Vale Potumuju. Esta barra já arrebatou menção honrosa em premiação fora do Brasil.
