Maranon Dark 73%, is dark chocolate balanced with aromatic notes of toasted walnut and red raspberry. Rediscovered in the valleys surrounding the Marañon River, this is pure cacao Nacional. Pairing: cheddar cheese, light red wine such as Gamay.
Piura Blanco Dark 73%
These unique beans come from the northern desert of Peru. These beans are very light in color (hence the word “blanco” in the name) and have a very low astringency, which is a hallmark of the region’s cocoa. This bar is pleasantly acidic with aromatic notes of lemon and tahini. Pairing: fresh goat cheese, Monkey Shoulder whiskey.
Chuncho Dark 73%
Originating mainly from Cuzco, these beans are harvested at altitudes ranging from 1300 to about 4000 feet above sea level. This bar is balanced with aromatic notes of black cherry and cashew butter. Pairing: Lamb Chopper gouda cheese, Zinfandel wine.
