Cacao Hunters is a bean to bar producer from Colombia (Popayán). Cacao Hunters was founded in 2013 by Carlos Ignacio Velasco and Mayumi Ogata. Cacao Hunters transforms cocoa beans from different corners of Colombia into chocolate bars from a single terroir. Some of the finest cocoa varieties in the world are grown in Colombia. The climate and land offer perfect conditions for producing exceptional cocoa. Cacao Hunters pays great attention to the research, conservation and promotion of rare and valuable varieties of wild cocoa in the indigenous regions of Colombia while preserving the biodiversity in Colombian cocoa. Cacao Hunters continually visit remote areas of Colombia in search of native cocoa trees. After careful evaluation, the varieties are stored in genetic collections. Cacao Hunters buys the cocoa it uses to make its chocolate directly from farmers in 5 regions of Colombia, positively impacting the living conditions of more than 3,000 cocoa farming families across the country. Cacao Hunter discovers these "hidden treasures" of indigenous cocoa varieties in Colombian forests, helping growers improve cocoa quality. Each cocoa variety is tested to decide the best fermentation, drying and roasting to develop the unique flavors and aromas of each cocoa sub-variety so that each tablet is an expression of a unique terroir.
