Amerindians (Kurzform für “Indians of the Americas) brachten Kakao schon vor 3.000 Jahren nach Mesoamerica. Den von den Olmeken und später den Mayas angebaute Kakao wurde später als Criollo bekannt. Der für diese Schokolade verarbeitete Kakao wurde fünfeinhalb Tage lang fermentiert. DIe Kakaobohnen wurden dabei einmal am Tag gewendet.
