Ces fèves ont été soigneusement sélectionnées par nos soins, puis elles ont été triées à la main, torréfiées, concassées et conchées dans notre atelier situé rue Fondaudège à Bordeaux dans la plus pure tradition du “Bean to Bar”.

Ces fèves sauvages proviennent des îlots forestiers de Catiene, San Carlos, San Francisco et Tranquilidad en Bolivie. Il s’agit d’une variété de “cacao sylvestre amazonico del Beni”.

Hasnaâ a adapté la torréfaction et le temps de conchage, afin de permettre aux notes fraîches de la pâte d’amande d’évoluer vers un final de châtaigne légèrement anisée, de s’exprimer au mieux dans cette tablette.

Ces tablettes exceptionnelles ne contiennent que deux ingrédients : Des fèves de cacao et du sucre de canne Bio.
