Dark chocolate bar – Made by Orfève
Ce Cru de Propriété exceptionnel se caractérise par sa douceur crémeuse et ses arômes délicats de banane, de fruits et de noix.
Située à 150km au Nord des côtes du Venezuela, l’île de la Grenade est surnommée l’île aux épices pour ses plantations de cannelle, de girofle, de noix de muscade ou de curcuma.
Depuis 1714, on y cultive également un cacao fruité et floral, qui bénéficie du sol volcanique dense et généreux.
Le Domaine L’Esterre appartient à la famille Ramdhanny depuis plus de 70 ans. Cette plantation d’un seul tenant se trouve dans le Nord-Est de l’île, au pied de collines recouvertes de forêts pluviales.
La famille y cultive du cacao et de la noix de muscade dans le plus strict respect des règles de l’agriculture biologique et de l’agroforesterie, maintenant ainsi la richesse et la fertilité du sol.
Les fèves sont récoltées durant la saison sèche, entre novembre et avril, puis fermentées à la propriété durant 7 à 8 jours avant d’être séchées au soleil pendant 6 à 7 jours.
