Ce Cru de Propriété est issu exclusivement de fèves Trinitario, soigneusement sélectionnées. Doté d’une belle acidité, il offre une symphonie rafraîchissante d’arômes de fruits rouges.
Introduit à Madagascar au début du XXème siècle, le cacao y a trouvé parmi ses plus beaux terroirs d’expression.
Hybride de Criollo et de Forastero, le Trinitario est souvent considéré comme le mariage parfait entre la subtilité du premier et la force de caractère du second.
La Ferme Bejofo, dont sont issues les fèves de ce chocolat, s’étend dans la vallée de Sambirano, près d’Ambanja, au Nord-Ouest du Pays. Depuis 1920, elle produit les cacaos considérés comme les plus aromatiques du pays.
Cette exploitation familiale entretient soigneusement son patrimoine de plants anciens, dans le respect des règles de l’agriculture biologique.
