A Bottarga e o Projeto A.MAR

Ovas de Tainha secas ao sol com sal, a Bottarga tem seus primeiros registros com os povos Fenícios, que durante suas navegações secavam as ovas dos peixes no convés dos seus barcos, como forma de preservar essa importante proteína e alimentar sua tripulação durante as travessias. O projeto A.MAR, nasceu em 2018, com objetivos de valorizar a pesca artesanal em comunidades tradicionais, e principalmente buscando o resgate de técnicas ancestrais de conservação de pescado fora do gelo. Sua produção, feita na comunidade do Bonete, na Ilhabela, através do Projeto A.MAR, é limitada anualmente a 1.000 unidades, por ser um recurso natural de fonte finita.

Fabricamos esta barra com leite de vaca em Jersey (como todas as nossas barras que contêm leite). Este leite possui 20% a mais de proteína, 15% a mais de cálcio e 20% a mais de sólidos do que qualquer outro leite no mercado. O leite é 100% artesanal e fabricado por nós, sob demanda.

As ovas da tainha são adicionadas à massa do nosso chocolate Branco Extra Cremoso, proporcionando um sabor bem característico dessa nossa barra no início da degustação. Depois o sabor do caramelo se sobressai e no final, finalmente somos supreendidos pelo defumado trazido pelas ovas da tainha. Sabor delicado, equilibrado e de vanguarda!

If the temperature exceeds 24° C, we ship orders using special insulating packaging and ice-gel. This type of packaging resists temperatures up to 35° C for approximately 3 days. At no additional cost!

Before shipping we check the weather forecast relating to our Turin warehouse, the destination location and the locations along the route (if known). We ensure that parcels are collected by the courier as late as possible in the afternoon. in case of hot weather we ship Monday to Wednesday depending on the expected transit time. And to exclude the risk of parcels being stored in a courier's warehouse over the weekend.
